A tasty Kerala snack with ghee roasted plantains & sweet coconut filling…
I would say this is the expensive cousin of Malabar kaipola & unnakaya- two of my favorite snacks. Each are manufactured with plantains. Kerala remaining a tropical land, plantains are located in abundance. A assortment of sweet & savoury snacks are created with plantains.

  Plantain Pola- Ghee Roasted Plantains With Sweet Coconut Filling – Kerala Snack   Writer: Thasneen Recipe style: Snack Cuisine: Indian Ripe plantains- 2 Ghee- 2 tbsp Ghee- 1 tbsp Grated coconut- ½ cup Sugar- 2 to 3 tbsp Cashew nuts- 10, roast in ½ tbsp ghee Raisins- 1 tbsp I’ve taken 2 ripe plantains, use medium-ripe plantains. Peel off the pores and skin & reduce the plantain into 2 equivalent halves. Lower each 50 % vertically into slender slices. I’ve sliced 1 plantain into 8 slices. For producing a significant pola, choose 3 to 4 plantains. Position a pan over medium heat, add 2 tbsp ghee. Position the sliced plantains in ghee & roast until both of those the sides convert light-weight golden brown. Transfer to a plate & preserve them apart. To the same pan, include 1 tbsp ghee. Incorporate grated coconut, saute for a couple minutes. Incorporate sugar, saute until coconut turns golden in coloration. Slide the coconut to just one side of the pan, include ½ tbsp ghee to the other side & increase cashew nuts and roast the cashew nuts. Add 1 tbsp raisins & saute. Blend with the coconut. Sweet coconut filling is prepared. This can be built forward of time. I have used a tiny round non-adhere saucepan. If building a significant pola use a 8-inch round pan. Grease the bottom & the sides of the pan with ghee. Place the ghee roasted plantain on the pan, keep them close to just about every other, make sure there are no gaps. In a bowl, crack 2 eggs & beat effectively with a fork. Pour 50 percent of the egg combination on to the plantains, distribute it evenly. Distribute the coconut filling above the layered plantains. Area ghee roasted plantains on the side of the pan as properly, that way the filling will be intact when the pola is flipped in excess of. Include the coconut filling with plantains & make sure there are no gaps. Pour the remaining egg combination more than the coconut filling & distribute it evenly. Shut the saucepan with a lid.
